Raw Material Expertise: How We Select and Process Fruits & Vegetables at Jiale Food

When you buy frozen fruit or vegetables from China, you are also buying the decisions made at the source: which variety, which harvest, which supplier. These decisions decide taste, texture, colour and food safety long before the product reaches the line.

1. Variety

Within one fruit or vegetable, the variety decides firmness, sweetness, acidity, colour stability and how well it keeps its shape when diced or frozen. Firm yellow peaches, for example, dice and freeze differently from soft white peaches. We match the raw material to the product it is meant for.

2. Harvest timing

Fruit picked too early lacks flavour; fruit picked too late breaks down during processing. Raw materials are checked for maturity before they are accepted.

3. Approved suppliers

Laiyang lies in Shandong, one of China’s main fruit and vegetable regions. We buy raw materials from approved suppliers, and each lot is recorded so it can be traced.

4. Receiving inspection

Every incoming lot is inspected before production: temperature, appearance (no mould, rot or pest damage), maturity, and residue requirements. Lots that do not meet the specification are rejected or held.

5. Processing, freezing and storage

Raw materials are sorted, washed and processed in 3,300 m² of fully enclosed workshops, then frozen and moved into our on-site 2,000-ton cold store.

6. Traceability

Lot records link each finished product back to its raw-material supplier and incoming inspection. We can trace a lot within one working day.
