Raw Material Expertise: How We Select and Process Fruits & Vegetables at Jiale Food

How Jiale Food selects and processes fruits and vegetables — from variety selection and harvest timing to cold chain management and full traceability.

When sourcing processed fruit or vegetable products from China, you are not just buying a product — you are buying the decisions made at the source: which variety, which season, which farm, which processing method.

These decisions determine everything from taste and texture to shelf life and food safety. At Jiale Food, raw material selection is not a purchasing task — it is a core technical capability.

This article explains what we look for in raw materials and how we turn raw agricultural products into export-ready processed goods.

The Fundamentals: What Defines Quality Raw Materials?

1. Variety Selection

Not all peaches are the same. Within a single fruit type, variety determines:

  • Sugar content (Brix level)
  • Flesh texture (firm vs. soft)
  • Acidity and pH balance
  • Color retention after processing
  • Suitability for specific processing methods (canning, freezing, pureeing)

For example:

  • Huaniu peaches (黄桃) — firm flesh, bright color, high Brix, ideal for canning
  • White peaches (白桃) — softer texture, lower acidity, better for syrup-packed products
  • Berries (草莓/蓝莓) — delicate, require rapid freezing and cold chain integrity

We work with our suppliers to ensure the right variety is grown for the intended product, not just the most available harvest.

2. Harvest Timing

Timing matters enormously. Fruit harvested too early lacks sugar content and flavor. Harvested too late, it becomes overripe and unsuitable for processing.

3. Farm Source and Growing Conditions

Shandong Province — where Jiale Food is located — is one of China’s premier agricultural regions. We source primarily from approved supplier farms and contract growers, not open market purchasing. This gives us traceability back to the plot of land and the growing conditions.

Raw Material Receiving Inspection

Every batch of raw material goes through our raw material receiving inspection before entering production. This is not optional — it is a firm gate in our HACCP plan.

  • Temperature: ≤ 8°C for chilled, ≤ -18°C for frozen
  • Visual inspection: No visible mold, rot, or pest damage
  • Chemical residue: Within GB national standards
  • Brix level: Must meet minimum for intended product

Our Main Product Categories

Frozen Fruits & Vegetables

Flash freezing locks in freshness, nutrition, and flavor at peak ripeness. The quality of frozen products is 90% determined by the raw material and the speed of processing.

What we process: Frozen stone fruits, berries, tropical fruits, vegetables, and frozen purees and pastes.

Canned Fruits & Vegetables

Canning requires raw materials with specific characteristics: firm flesh, high Brix, bright color, and uniform shape. Our core products include canned peaches, pears, and fruit cocktails.

Fruit Purees, Pastes & Jams

For purees and jams, the Brix-acid balance is critical. We work with ingredient formulators to ensure specifications are met before each processing season.

Cold Chain & Traceability

Our frozen storage maintains -18°C to -25°C. We monitor cold chain integrity from transport to production. Our full traceability system can trace any finished product back to the specific farm plot within one working day.
